Bacon Wrapped Stuffed Jalapenos

You can’t go wrong with Bacon,  Sausage and Cheese, the magic trinity, and then stuff it all into a Jalapeno pepper and you have a great appetizer or snack.  I have seen several recipes that stuff the jalapenos with cream cheese, but they are so much better with sausage.  They can be made ahead of time and then put into the oven when your guests arrive.  I have even tried cooking them ahead of time and then re-heating them in the oven,  it works.

Ingredients:

6 jalapenos sliced and seeds removed

6 slices bacon, sliced in half

1 pound sausage, Italian, mild or spicy, maple, turkey. your preference, I use Italian sausage.

2 cups sharp cheddar, shredded

Directions:

1.  Heat oven to 400°F.

2.  Cut each jalapeno, lengthwise and remove seeds.

3.  In a bowl combine cheese and sausage.

4.  Fill each jalapeno with the cheese/sausage mixture and wrap with a slice of bacon.

5.  Secure bacon slice with toothpicks.

6.  Place stuffed jalapenos on baking sheet and cook for about 20 minutes, or until bacon is crispy.
